
Latvian Stewed Cabbage

Description
Fermented cabbage stewed with bacon until brown, with the addition of sugar and without vinegar - this is an authentic Latvian recipe. My version is more diet-friendly. So it's up to you. You can stew the cabbage just the same in a pot on the gas stove. Do not add water, just stir! Caraway seeds are a must-have ingredient for Latvian cabbage, even for those who don't usually like them - they blend in very well.
Ingredients
- Onion 1 head
- Carrot 4 pieces
- Brown Sugar 2 tablespoons
- Balsamic Vinegar 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Dried cranberries with sugar 2 tablespoons
- Ground Caraway 2 teaspoons
- White Cabbage 1 piece
- Apple 2 pieces
Step-by-Step Guide
Step 1
Shred the medium head of cabbage, carrot, and onion.
Step 2
Line a baking sheet with parchment paper and drizzle with vegetable oil.
Step 3
Place the cabbage with vegetables and additions on the baking sheet, season with salt and pepper, and add sugar.
Step 4
Mix everything well by hand until evenly coated with oil and vinegar. Preheat the oven to 390°F (convection), and place the baking sheet with cabbage inside.
Step 5
After about 15–30 minutes, stir and repeat this process 3–4 more times until a beautiful golden color appears.
