Lamb with Tomatoes and Feta

Ingredients

  • Rack of Lamb 16 pieces
  • Tomatoes 20 oz
  • Feta cheese 5 oz
  • Rosemary 0 oz
  • Olive Oil to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the grill in the oven. Season the ribs, trimmed of excess fat, with salt and pepper on both sides. Place them on a baking tray and put them in the oven, grilling for 4-5 minutes, then flip and grill for the same amount of time on the other side. If a more thorough cooking is desired, increase the time by a couple of minutes for each side. Remove the tray and let the ribs rest in a warm place for 5 minutes.

Step 2

Cut the tomatoes into quarters and remove the seeds, then chop them. Combine with coarsely chopped feta cheese and finely chopped fresh herbs. Season with salt and pepper, and drizzle with olive oil.

Step 3

Serve the lamb with a salad of tomatoes and feta cheese, along with young potatoes and fresh bread.
