
Lamb with Plums

Description
Plums can be replaced with dates, but in this case, there is no need to add sugar.
Ingredients
- Lamb 35 oz
- Plums 20 oz
- Onion 1 head
- Garlic 1 clove
- Olive Oil 4 tablespoons
- Saffron ½ teaspoon
- Nutmeg ¼ teaspoon
- Grated Ginger Root ½ teaspoon
- Cinnamon 2 teaspoons
- Sugar 2 tablespoons
- Pistachios 0 oz
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Finely chop the onion and sauté it in a heavy-bottomed pot with olive oil until golden brown. Add the minced garlic and diced meat, and fry, stirring constantly. Add salt, saffron, ginger, and nutmeg. Pour in enough water to cover the meat, and simmer covered for 1 to 1.5 hours.
Step 2
Cut the plums in half and remove the pits. Place them in the pot, add sugar, cinnamon, and pepper. Simmer covered for 15 minutes, then another 5 minutes uncovered to thicken the sauce.
Step 3
Transfer the lamb to a serving dish and lightly sprinkle with pine nuts (without oil) or chopped almonds.
