Ingredients
- Lamb 20 oz
- Olive Oil 0 fl oz
- Coarse Salt to taste
- Ground Black Pepper to taste
- Chopped almonds 2 tablespoons
- Fresh Mint 1 bunch
- Parsley 1 bunch
- Garlic 1 clove
- Feta cheese 0 oz
- Fresh basil leaves to taste
Step-by-Step Guide
Step 1
To prepare the mint pesto, blend toasted walnuts (toasted in the oven for 10 minutes), finely chopped mint, parsley, salt, feta, garlic, and 60 ml of olive oil in a blender.
Step 2
Coat the lamb fillet with olive oil and a mixture of salt and pepper.
Step 3
Place the lamb on a preheated baking sheet and bake in the oven for 20-30 minutes. About 4-5 minutes before it's done, remove the meat, spread a small amount of pesto on it, and continue baking until fully cooked.
Step 4
Remove the roasted lamb from the oven and let it cool for 5 minutes. Cut into serving pieces.
Step 5
Serve the chops with the previously prepared mint pesto, garnished with sprigs of fresh basil. Serve with sides of your choice.
