- Garlic 1 clove
- Fresh basil leaves ½ piece
- Cake crumbs 0.3 cup
- Grated Pecorino Pepato Cheese 0 oz
- Herbes de Provence 2 tablespoons
- Olive Oil 2½ tablespoons
- Dijon Mustard 1½ tablespoons
- Rack of Lamb 25 oz
Step-by-Step Guide
Step 1
In a food processor, chop the garlic and add the basil, grated cheese, breadcrumbs, herbes de Provence, and mustard. Blend well and pour in the olive oil. Mix thoroughly.
Step 2
Preheat the oven to 430°F. Season the lamb with salt and pepper. Place the meat on a small baking tray and sprinkle the breadcrumbs on top, pressing them down slightly. Roast the meat for about 35 minutes, until the internal temperature reaches 135°F. Remove from the oven and let it rest for 15 minutes.
Step 3
Transfer the meat to a cutting board and cut it into 2 pieces. Arrange on plates and serve.
