Lamb with Black Olives
Ingredients
- Garlic 2 cloves
- Lamb 0 lbs
- Rosemary 2 sprigs
- Olives stuffed with lemon 30 pieces
- Baking Tomatoes 2 cans
- Olive Oil 3 tablespoons
- Dry White Wine 2 cups
- Salt to taste
- Ground Black Pepper to taste
- Citrus Zest Mix to taste
Step-by-Step Guide
Step 1
In a deep skillet, heat the olive oil. Sauté the garlic until golden. Add the rosemary.
Step 2
Add the lamb, cut into small pieces. Sauté until browned.
Step 3
Pour in the wine and, when most of it has evaporated, add the tomatoes (you can add lemon zest if desired, as it enhances the flavor of the olives).
Step 4
Mix well, cover with a lid, and simmer on low heat for 15 minutes.
Step 5
Rinse the olives and add them to the skillet. Simmer with the lid on for 30 minutes (to prevent the meat from drying out, it is recommended to add a little water).
Step 6
Serve with a potato side dish.
