- Coriander essential oil 1 teaspoon
- Green peppercorns 1 teaspoon
- Garlic 2 cloves
- Orange zest 1 tablespoon
- Olive Oil 1 tablespoon
Step-by-Step Guide
Step 1
Preheat the oven to 430°F. Season the lamb with salt and pepper.
Step 2
In a plastic bag, combine cumin, coriander, and green peppercorns. Crush the seeds with a rolling pin or meat mallet. Add minced garlic, zest, and olive oil to the bag. Mix until it forms a paste and spread it over the meat.
Step 3
Place the meat in a skillet and put it in the oven for 10 minutes. Reduce the temperature to 390°F and roast for another 15 minutes for medium doneness. Slice the meat and serve.
