Lamb skewers with sweet peppers
Ingredients
- Lamb Shoulder 1 piece
- Onion 3 pieces
- Sweet Pepper 2 pieces
- Olive Oil 5 fl oz
- Lemon 1 piece
- Garlic 2 cloves
- Oregano 1 teaspoon
- Thyme to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
For this dish, use a small lamb shoulder, trimmed of bone and fat. To make the skewers juicier, it's advisable to leave a bit of fat. Cut the meat into cubes of about 4 cm. Slice the onion into wedges. Cut the pepper crosswise.
Step 2
In a large bowl, mix the oil, garlic, herbs, lemon juice, and season with salt and pepper. Add the pieces of meat.
Step 3
Cover the bowl tightly and place it in the refrigerator for 6–8 hours, stirring the contents occasionally.
Step 4
After the specified time, remove the meat from the marinade and thread it onto skewers, alternating with the onion and pepper wedges. Place them in a pan or on a grill and brush with the marinade.
Step 5
Place the grill over hot coals. Grill the skewers for 20–25 minutes, turning occasionally and brushing with the marinade. Serve immediately.
