- Lamb Shoulder 0 lbs
- Garlic 1 head
- Smoked salt 0 oz
- Garlic chips 0 oz
- Rosemary 3 sprigs
- Thyme 3 sprigs
- Basil ½ bunches
- Cilantro ½ bunches
- Olive Oil 5 fl oz
- Salt to taste
Step-by-Step Guide
Step 1
Inspect the shoulder; if there is a seal on it, remove it.
Step 2
Peel and crush the garlic.
Step 3
Prepare the spread: combine crushed garlic, onion powder, garlic powder, smoked paprika, and 4 tablespoons of olive oil. Mix well.
Step 4
Place the meat on a large sheet of foil and generously coat it with this mixture using a brush.
Step 5
Make incisions in the shoulder and stuff them with sprigs of fresh rosemary and thyme — lamb loves their piney notes.
Step 6
Wrap in a large double-layer foil pouch and place on moderate heat on the grill for one hour.
Step 7
Serve whole, garnished with coarsely chopped basil and cilantro.
