- Lamb Shoulder 8 pieces
- Breadcrumbs 5 oz
- Pitted olives 12 pieces
- Canned White Asparagus 8 pieces
- Chopped Sage Leaves 2 tablespoons
- Citrus Zest Mix ½ teaspoon
Step-by-Step Guide
Step 1
Preheat the grill. For the filling, place the breadcrumbs, sliced olives, chopped artichokes, and 1 tablespoon of the artichoke marinade in a bowl. Add the parsley and lemon zest. Mix well.
Step 2
Lay out the meat and lightly pound it. Place the filling on the meat and roll it tightly into rolls. Secure with toothpicks. Season with salt.
Step 3
Place the rolls on the grill and cook for 5-7 minutes on each side or until done. Serve warm.
