Lamb ribs with fresh herbs and roasted figs
Ingredients
- Lamb Neck Fillet 0 lbs
- Rosemary ½ bunch
- Thyme to taste
- Grapeseed Oil 2 tablespoons
- Marjoram ½ bunch
- Olive Oil 1 tablespoon
- Garlic 3 cloves
- Green Figs 12 pieces
Step-by-Step Guide
Step 1
Chop and mix the herbs in a small bowl.
Step 2
Rub the lamb with olive oil, half of the herbs, and garlic. Cover and let sit overnight.
Step 3
Preheat the oven to 355°F. Heat the grapeseed oil in a large skillet over medium heat.
Step 4
Season the lamb with salt and pepper and sear on both sides until browned, about 5 minutes.
Step 5
Transfer the lamb to a baking sheet and roast in the oven until cooked through, about 20 minutes.
Step 6
Place the meat on a cutting board and let it rest for 5–10 minutes.
Step 7
Meanwhile, cut the figs in half and place them with sprigs of thyme on a baking sheet, sprinkle with the remaining herbs, and drizzle with olive oil. Roast in the oven for 10 minutes at 390°F.
Step 8
Slice the lamb into individual portions and arrange on plates, placing 4 fig halves on each plate.
