Lamb Ribs in Chinese Spices

Ingredients

  • Cilantro to taste
  • Garlic 2 cloves
  • Rack of Lamb 25 oz
  • Mild Chili Spice 1 piece
  • Grated Ginger Root 1 teaspoon
  • Soy Sauce 3 tablespoons
  • Balsamic Vinegar 1 tablespoon
  • Vegetable Oil 2 tablespoons
  • Toasted Sesame 1 tablespoon
  • Chinese Five Spice a pinch

Step-by-Step Guide

Step 1

Rinse the ribs, trim off excess fat and any dry edges, if present.

Step 2

Cut into segments, one rib per piece.

Step 3

Prepare the marinade from: grated ginger and garlic, crushed chili (remove seeds for less heat), vinegar, soy sauce, and spices.

Step 4

Marinate for about one hour.

Step 5

In a wok, pour in the oil, add the ribs, and lightly fry over high heat, then pour in boiling water to completely cover the meat, but no more.

Step 6

Cover the wok with a lid, reduce the heat, and simmer until the water evaporates, about 30 minutes.

Step 7

When the liquid has evaporated, remove the lid, increase the heat, and fry the ribs until browned.

Step 8

Transfer to a plate, sprinkle with sesame seeds and cilantro leaves.
