Lamb Ribs in Aromatic Crust

Ingredients

  • Chervil 1 bunch
  • Rack of Lamb 8 pieces
  • Tarragon 1 bunch
  • Breadcrumbs 4 tablespoons
  • Chocolate eggs 2 pieces
  • Mustard Greens 2 tablespoons
  • Wheat Flour 2 tablespoons
  • Dijon Mustard 1 tablespoon
  • Sugar 1 teaspoon
  • Turnips 1 bunch
  • Olive Oil 0 fl oz
  • Butter 0 oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Wash the radishes, peel them, and sauté them whole in butter in a deep skillet (about 2 minutes). Sprinkle with sugar and sauté for another 2 minutes. Add enough water to cover the radishes, season with salt and pepper, and cook covered on low heat until the radishes are tender (about 25 minutes).

Step 2

Finely chop the herbs and mix them with the breadcrumbs in a wide plate.

Step 3

In another bowl, beat the eggs with the mustard, adding salt and pepper to taste.

Step 4

Place the flour in a separate bowl.

Step 5

Coat the ribs first in flour, dip them in the egg, roll them in the breadcrumb and herb mixture, and fry in olive oil for 6–8 minutes on each side.

Step 6

Serve with the stewed radishes, and you can use the sweet sauce in which they were cooked.
