
Lamb Rack with Nectarines

Ingredients
- Rack of Lamb 5 lbs
- Nectarines 20 oz
- Thyme 5 oz
- Rosemary 5 oz
- Garlic 12 cloves
- Salt to taste
- Spices to taste
- Ground Black Pepper to taste
- Clarified Butter to taste
- Doshab (Mulberry Syrup) 0 oz
- Olive Oil to taste
- Herbs to taste
Step-by-Step Guide
Step 1
Clean the rack and cut it into portions.
Step 2
Season with salt and pepper on both sides.
Step 3
In a bowl, mix thyme and rosemary, and add a few cloves of garlic.
Step 4
Place the rack in the spice and garlic mixture, add olive oil, season with salt, mix, and let marinate for 15–20 minutes.
Step 5
Wash the nectarines, cut them into wedges, and season with salt and pepper.
Step 6
Place in a deep bowl, add a bit of rosemary and thyme, and mulberry syrup.
Step 7
Mix and let marinate for about 10–15 minutes.
Step 8
Place the rack on a preheated skillet with clarified butter, add nectarines, and sauté until browned, constantly turning, for about 3–4 minutes.
Step 9
Transfer to a preheated oven at 355°F for 10 minutes.
Step 10
Serve the finished dish on a plate, adding your favorite herbs alongside.
