Lamb Leg with Mint and Rosemary
Ingredients
- Lamb Neck Fillet 5 lbs
- Garlic 6 cloves
- Fresh Rose Hips 4 tablespoons
- Olive Oil 2 tablespoons
- Mint Leaves 6 tablespoons
- Fresh Mint 3 stems
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Chop the garlic, rosemary, and olive oil in a blender until it forms a paste. Add the mint leaves and blend again. Season with salt and pepper.
Step 2
Make incisions in the lamb and stuff with the prepared mixture. Rub the remaining mixture over the leg. Cover with foil and roast in the oven for about 2 hours.
Step 3
Place on a board and let it cool, covering with foil.
Step 4
Arrange mint leaves on a platter, place the lamb leg on top, and garnish with sprigs of rosemary.
