Lamb leg with anchovies and garlic
Ingredients
- Lamb Neck Fillet 5 lbs
- Garlic 3 cloves
- Anchovy fillet 4 pieces
- Chicken Broth 1 glass
- Dry White Wine 1 glass
- Bouquet Garni 2 bunches
- Olive Oil 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the oven to 250°F. Cut the anchovies into three pieces. Make six slits on each side of the lamb leg, placing a quarter of a garlic clove and a piece of anchovy into each slit.
Step 2
Season with salt and pepper, then sauté in oil until golden brown. Transfer to a baking dish, add herbs, broth, and wine. Cover tightly and braise for seven hours.
Step 3
Remove the meat and reduce the released juices until thickened. Serve with potatoes as a side dish.
