Lamb in Wine with Barberry

Ingredients

  • Lamb Shoulder 20 oz
  • Red Grape Juice 10 fl oz
  • Olive Oil 1 tablespoon
  • Garlic 3 cloves
  • Basil 0.3 bunches
  • Dried Barberry 0 oz
  • Salt 1 teaspoon
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Wash the lamb, remove the membranes, trim the fat but leave a little for juiciness. Cut into pieces, season with salt and pepper, and place in a container. Peel the garlic, crush it with a knife, and cut into several pieces.

Step 2

Wash and chop the basil leaves. In a glass with wine, add a tablespoon of olive oil. Place the garlic, basil, and barberry on the meat.

Step 3

Evenly pour the wine over the contents of the container. Let marinate for at least 1 hour at room temperature (or for several hours in the refrigerator).

Step 4

Heat a pan over medium heat, add all the contents of the container, stir, and cover with a lid.

Step 5

After 10 minutes, turn all the pieces over and cover with the lid again. Cook for another 15 minutes, turn off the heat, and serve immediately. It is very important to have sauce remaining in the pan! Rice, buckwheat, or bulgur make perfect side dishes.
