Ingredients
- Lamb Neck Fillet 30 oz
- Sugar 2 tablespoons
- Prunes 5 oz
- Balsamic Vinegar 4 tablespoons
- Red Grape Juice 5 fl oz
- Chicken Broth 5 fl oz
- Thyme 2 tablespoons
Step-by-Step Guide
Step 1
Place sugar in a pot and heat until it melts and turns a dark caramel color. Add vinegar and stir.
Step 2
Add prunes, broth, and wine. Boil for 10 minutes until the liquid reduces by half. Add 1 tablespoon of thyme.
Step 3
Sear the lamb for 4 minutes on each side until cooked through.
Step 4
Serve the lamb on mashed potatoes, drizzled with the sauce. Sprinkle with remaining thyme.
