Lamb in Cherry and Port Wine Sauce with Mint
Ingredients
- Olive Oil 2 teaspoons
- Rack of Lamb 20 oz
- Shallot 0 oz
- Red port ¾ cup
- Ground dried cherries 5 oz
- Chicken Broth ½ cup
- Chili jam 3 tablespoons
- Fresh Mint to taste
- Balsamic Vinegar 1 tablespoon
- Cardamom ½ teaspoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat the olive oil in a skillet over medium heat.
Step 2
Cut the meat into 4 pieces and season with salt and pepper. Place in the skillet and sear, turning, for about 10 minutes for medium doneness. Transfer to a plate and cover with foil.
Step 3
Remove excess fat from the skillet and add the finely chopped shallot. Sauté for 1 minute. Then add the port wine, broth, cherries, jam, vinegar, and cardamom. Bring to a boil and simmer for about 6 minutes until the sauce thickens slightly. Season with salt and pepper.
Step 4
Pour the sauce over the meat and sprinkle with chopped mint. Serve.
