Lamb Heart Stew
Ingredients
- Lamb stomach 5 oz
- Onion 5 oz
- Cilantro ½ bunch
- Garlic 2 cloves
- Salt to taste
Step-by-Step Guide
Step 1
Cut the small onions lengthwise into four parts and separate them into petals. In a very hot wok, heat a small amount of vegetable oil and, stirring constantly, quickly fry the hearts. As soon as they are slightly browned, add the onion and chopped garlic, and fry, stirring continuously, until the onion becomes slightly transparent but remains crispy.
Step 2
Add salt to taste. Add the chopped cilantro, remove from heat. Serve.
Step 3
Rinse the lamb hearts, flatten them, remove excess, deeply score them almost to the end in a grid pattern on the outside, and cut into pieces measuring 3.5 cm x 3.5 cm.
