Lamb Curry (Rogan Josh)
Ingredients
- Onion 4 pieces
- Lamb 0 lbs
- Garlic 3 cloves
- Nutmeg 2 teaspoons
- Natural Yogurt 10 fl oz
- Ground coriander 2 teaspoons
- Paprika 3 teaspoons
- Ground fennel seeds 1 teaspoon
- Mild Chili Spice 2 teaspoons
- Grated Ginger Root 1 teaspoon
- Cardamom 2 teaspoons
- Turmeric 1 teaspoon
- Salt to taste
- Bay leaf 2 pieces
Step-by-Step Guide
Step 1
Wash the lamb and remove any sinew.
Step 2
Cut off one particularly sinewy small piece, place it in a pot with water, add salt, and boil to make broth.
Step 3
Cut the remaining lamb into medium cubes (about 2.5 cm).
Step 4
Mix nutmeg, coriander, fennel, paprika, chili (add 2 teaspoons if you like it spicy), cardamom, ginger, and turmeric. Add a small amount of broth (about 3-4 tablespoons), bay leaf, and mix until it forms a uniform paste.
Step 5
Chop the onion and finely chop the garlic. Sauté in vegetable oil until golden, then add the spice paste, a little (about 2 tablespoons) of broth, and sauté for a few more minutes.
Step 6
Add the lamb, season with salt, and sauté until the meat loses its blood. Then pour in the yogurt (full-fat, or you can substitute with cream), bring to a boil, and cook for 5 minutes.
Step 7
Pour in the prepared broth (about 250 ml), stir, and simmer on low heat until done. It will need to cook (and then stew) for a long time, stirring occasionally. If necessary, you can add more broth or even cream (for those who can afford rich food). The meat should become tender, and the liquid should evaporate, leaving a thick, slightly uneven brick-brown sauce.
