Ingredients
- Rack of Lamb 20 oz
- Walnuts 1 tablespoon
- Cilantro 1 bunch
- Onion 1 head
- Cayenne Pepper to taste
- Black Cumin (Cumin) to taste
- Paprika to taste
- Salt to taste
- Olive Oil to taste
- Tamarind Paste 0 oz
- Natural Yogurt 5 fl oz
- Meyer Lemon Juice 0 fl oz
- Garlic 2 cloves
Step-by-Step Guide
Step 1
Toast the walnuts in a dry skillet and chop them using a blender.
Step 2
Peel the onion and grate it on a fine grater.
Step 3
Combine the spices: paprika, salt, and cumin.
Step 4
Wash the cilantro, dry it, and chop it finely.
Step 5
Add the walnuts, onion, cilantro, and spices to the ground meat, knead thoroughly, and beat (form a large ball of the mixture and sharply throw it into the bowl) 2-3 times.
Step 6
The mixture will become homogeneous. Shape the mixture into sausages.
Step 7
Cover and refrigerate for 20 minutes.
Step 8
Skewer the kebabs onto wooden skewers.
Step 9
Place on a grill rack greased with olive oil and preheated, cooking over high heat, turning until golden brown (10-15 minutes).
Step 10
For the sauce, combine the yogurt, tahini paste, garlic pressed through a garlic press, lemon juice, and blend until smooth.
Step 11
Serve with the sauce.
