Kolozsvár Goulash

Ingredients

  • Beef 20 oz
  • Onion 2 pieces
  • Vegetable Oil 2 tablespoons
  • Orange Bell Peppers 2 pieces
  • Potato 2 pieces
  • White Cabbage 10 oz
  • Chicken Broth 15 fl oz
  • Paprika 2 tablespoons
  • Dried Chamomile ½ teaspoon
  • Toasted Cumin Seeds ½ teaspoon
  • Salt to taste
  • Ground Black Pepper to taste
  • Tomatoes 4 pieces

Step-by-Step Guide

Step 1

Cut the meat into 2 cm cubes, peel and finely chop the onion and garlic.

Step 2

In a hot pan, sauté the meat in fat, add paprika, cumin, marjoram, onion, stir, and sauté for a couple of minutes, then pour in 250 ml of water.

Step 3

Transfer to a pot, lightly salt, and cook for 1 hour on low heat (adding water if necessary, which should just cover the meat).

Step 4

Meanwhile, pour boiling water over the tomatoes for 5 minutes, then rinse with cold water, peel off the skin, seeds, and stems, and slice.

Step 5

Peel and dice the potatoes. Clean the peppers and cut them into thin strips. Slice the cabbage thinly.

Step 6

Add the potatoes and cabbage to the pot with the meat, pour in the broth, bring to a boil, reduce the heat to medium, and cook for 20 minutes until the potatoes are almost done.

Step 7

Add the peppers and tomatoes, and cook for another 10 minutes.

Step 8

Season with salt and pepper, and serve the goulash hot.
