Ingredients
- Rack of Lamb 4 pieces
- Dry White Wine 5 fl oz
- Malt Vinegar 0 fl oz
- Honey 0 fl oz
- Oregano to taste
- Olive Oil 0 fl oz
- Ground Cumin to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Mix the marinade: pour the wine into the honey, add the vinegar, sprinkle in the cumin and oregano, and whisk with a fork until emulsified.
Step 2
Make cuts in the meat across the bone, rub with salt and pepper, and coat with the marinade. Place each shank on a layer of parchment paper (and wrap it in 2 layers of foil), adding tomatoes, onion, and herbs if desired, and seal on all sides.
Step 3
Cook in the oven at 200°C for 20 minutes, then at 150°C for another 1.5 hours. Serve with lemon and herbs.
