Description
A traditional Indian very spicy porridge made from mung beans and rice, one of the most important Ayurvedic dishes. The spices include cardamom, cumin, turmeric, garlic, and ginger. In this version of kichari, there are no vegetables, but sometimes zucchini, carrots, and pumpkin are added.
Ingredients
- Olive Oil 2 tablespoons
- Cumin Seeds ½ teaspoon
- Onion ½ head
- Ginger 5 oz
- Black cardamom seeds 1 piece
- Garlic 1 clove
- Turmeric ¼ teaspoon
- Mung Beans ½ cup
- Wild rice ¼ cup
- Water 2½ cups
Step-by-Step Guide
Step 1
Soak the mung beans for 2 hours.
Step 2
Heat the oil in a pan, add cumin.
Step 3
When the aroma of cumin starts to emerge, add the peeled and chopped onion and ginger, and sauté until the onion is translucent.
Step 4
Add cardamom, whole garlic, and turmeric. Keep on heat for 1 minute, stirring.
Step 5
Add the grains and keep on heat for 2 minutes.
Step 6
Pour water into the kichari, add salt, and bring to a boil.
Step 7
Reduce the heat, add more water, cover, and cook for 30 minutes, stirring occasionally.
