Ingredients
- Wheat Flour 0 lbs
- Ocean salt 1 tablespoon
- Water 10 fl oz
- Salad Potatoes 25 oz
- Onion 0 oz
- Salt to taste
- Suluguni Cheese 10 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Knead the dough and let it rest for 1 to 1.5 hours at room temperature.
Step 2
Peel the potatoes, boil them, pass through a sieve, and cool to room temperature.
Step 3
Grate the suluguni cheese on a fine grater. Finely chop the onion and sauté until golden in vegetable oil.
Step 4
Add the grated suluguni, sautéed onion, salt, and pepper to the mashed potatoes.
Step 5
Roll the dough on the table into a sausage shape, cut off a small piece, about 50 grams. Roll the piece into a circle, place about 50 grams of filling in the center. Gather the edges of the dough to the center, twist tightly. Cut off any excess dough with a knife.
Step 6
Boil each khinkali in salted boiling water for 5 to 7 minutes.
Step 7
Serve with sour cream, matsoni, or yogurt with herbs.
