Kharcho Soup
Ingredients
- Thick Beef Rib 4 pieces
- Rice 5 oz
- Onion 1 head
- Crushed Tomatoes in Their Own Juice 1 can
- Khmeli-suneli 1 tablespoon
- Tkemali (plum sauce) 1 tablespoon
- Walnuts to taste
- Garlic 2 cloves
- Cilantro 3 tablespoons
- Adjika to taste
- Ground Black Pepper to taste
- Bay leaf to taste
- Salt to taste
Step-by-Step Guide
Step 1
Pour water over the ribs and boil the broth for 1.5 to 2 hours. Add salt to taste.
Step 2
Remove the meat, strain the broth, bring it to a boil, and add the rice. Adjust the amount of rice according to the size of the pot: the soup should be quite thick.
Step 3
In a skillet, sauté the finely chopped onion and tomatoes, then add khmeli-suneli, chopped walnuts, and tkemali. Combine the mixture with the soup and switch to low heat. Add bay leaf, pepper, and adjika. Before finishing cooking, return the finely chopped meat to the soup, add chopped garlic, and a handful of cilantro.
