Ingredients

  • Pumpkin 10 lbs
  • Basmati rice 5 lbs
  • Raisins 10 oz
  • Dried Apricots 10 oz
  • Prunes 10 oz
  • Chopped almonds 10 oz
  • Walnuts 5 oz
  • Honey 5 oz
  • Butter 5 oz
  • Salt to taste

Step-by-Step Guide

Step 1

Boil the rice until cooked.

Step 2

Cut a small cap off the pumpkin.

Step 3

Remove seeds and fibers from the pumpkin. Use a spoon to scoop out some of the flesh from the walls. The wall thickness should remain about 12 mm.

Step 4

Rinse the raisins, dried apricots, and prunes, and chop them finely.

Step 5

Sauté in butter for 3–4 minutes.

Step 6

Soak the almonds for 20 minutes.

Step 7

Chop the walnuts coarsely. Add to the dried fruits. Mix everything well.

Step 8

Add the nuts and dried fruits to the boiled rice. Add salt. Mix.

Step 9

Brush the inside of the prepared pumpkin with honey, add the filling. Cover with a lid.

Step 10

Place in a preheated oven at 355°F for 1.5 hours.

Step 11

Remove from the oven, take off the top, and optionally place a piece of butter and a bit of honey on top.

Step 12

Serve.
