Kebab Pilaf
Ingredients
- Lamb Neck Fillet 20 oz
- Onion 4 heads
- Lamb Fat Netting 0 oz
- Rice 2 cups
- Water 4 cups
- Clarified Butter ½ cup
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Bring the water to a boil, add half of the butter, add the rinsed rice, and cook on low heat without a lid until the water evaporates to the level of the rice. Then pour the second half of the butter, cover with a lid, and keep on low heat until the rice is fully cooked.
Step 2
Pass the lamb through a meat grinder, mix with chopped onions, salt, and pepper. Then fry in the lamb fat, pour beaten eggs over it, and bake in the oven.
Step 3
When serving, mound the rice on a plate and place the baked filling on top. Serve separately with matsoni and cinnamon.
