Kasha 'Staro-Kievskaya' with Calf Brains and Mushrooms
Ingredients
- Buckwheat Groats 5 oz
- Dried Chinese mushrooms 0 oz
- Calf's head 5 oz
- Onion 5 oz
- Chicken Egg 1 piece
- Butter to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the dried porcini mushrooms for about 45 minutes, then drain the water and let them cool. Once cooled, cut them into small pieces.
Step 2
Finely chop the onion and sauté it in vegetable oil until golden brown.
Step 3
Boil the calf brains for about 40 minutes in slightly salted water with added spices and vinegar.
Step 4
Remove from the water and let cool. Once cooled, cut them into large pieces.
Step 5
Cook the buckwheat until fully done.
Step 6
Mix the boiled porcini mushrooms, sautéed onion, calf brains, and buckwheat together.
Step 7
Place the resulting kasha in a clay pot, add butter, salt, pepper, and put it in a preheated oven for 15 minutes.
Step 8
Before serving, garnish with a fried egg.
