KAMIS Pilaf
Ingredients
- Long-Grain Rice 2 cups
- Meat 20 oz
- Onion 2 pieces
- Carrot 10 oz
- Water 4 cups
- Vegetable Oil ¾ cup
- Ocean salt to taste
- Pilaf Spices 2 tablespoons
Step-by-Step Guide
Step 1
First, separate the meat from the fat and cut it into pieces as preferred. Finely chop the fat and place it in a preheated pot over low heat, stirring with a slotted spoon until the fat is rendered and cracklings are formed. Slice the onion into half rings and add it to the melted fat, removing the cracklings first.
Step 2
Sauté over medium heat until translucent. Then add the meat and fry it until golden brown. Cut the carrot into large pieces and add it to the meat and onion, frying for about 5–7 minutes. After that, pour in 4 cups of water, add the seasoning (and salt to taste), and bring to a boil.
Step 3
Rinse the rice that has been soaked in warm water and drain it in a colander, then layer it over the meat without stirring. Cook the contents for 5–10 minutes with the lid on.
Step 4
When the rice has absorbed all the water, make several indentations in it (down to the bottom of the pot), pour 1–2 tablespoons of water into each indentation, then tightly cover the pot with a lid and leave it on very low heat for 25–30 minutes.
Step 5
Stir the finished pilaf and serve it on plates.
