Description
I take the neck — it has the right shape, is a bit fatty, tender, and beautiful... just perfect for this recipe!
Ingredients
- Ground Black Pepper a pinch
- Salt to taste
- Pork Neck 25 oz
- Dried Chamomile to taste
Step-by-Step Guide
Step 1
Place the meat on a cutting board, fat side up, and make cuts almost to the bottom, creating a 'book'. Rub salt, pepper, and herbs (I use a mix of Italian herbs) all over it.
Step 2
Carefully place the meat into the sleeve. Spread it out so it cooks evenly. Place it in a preheated oven at 390°F for 50–60 minutes (depending on the weight). At the end, I do NOT cut the sleeve, as the crust forms nicely.
