Juicy Chicken with Fruit Sauce

Ingredients

  • Poultry 5 lbs
  • Spanish onions 10 oz
  • Garlic 3 cloves
  • Nectarines 4 pieces
  • Dry White Wine 10 fl oz
  • Vegetable Oil 3 tablespoons
  • Fresh Rose Hips 1 sprig
  • Chicken Broth 10 fl oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Cut the chicken into 8 pieces. Slice the onion into 8 wedges and chop the garlic. Wash the nectarines, remove the pits, and slice the flesh.

Step 2

Heat the vegetable oil and fry the chicken pieces until golden brown. Add the onion and garlic and sauté.

Step 3

Pour in the wine and broth. Add the rosemary and simmer for 40 minutes. After 30 minutes, add the nectarine slices and continue to simmer.

Step 4

Stir in the sauce thickener (a mixture of flour and fat - roux), season with salt and pepper to taste.

Step 5

Serve the chicken with croquettes and broccoli.
