
John Dory with Tarator Sauce

Description
John Dory is the English name for the fish known as Saint Peter's fish, or as we call it, sunfish, which has a distinctive dark spot on each side.
Ingredients
- Walnuts 5 oz
- White bread 2 slices
- Garlic 2 cloves
- Olive Oil 5 fl oz
- John Dory Fillet 30 oz
- Meyer Lemon Juice 3 tablespoons
- Lemon 1 piece
Step-by-Step Guide
Step 1
Chop the walnuts in a blender until crumbly. Soak the bread in water, removing the crust first, then lightly squeeze it, break it into pieces, and place it in the blender along with the chopped garlic. Blend well. Mix the oil and lemon juice, and very slowly, while continuously blending, pour it into the blender. Season with spices and transfer to a sauceboat.
Step 2
Heat a skillet, lightly grease it with oil, and fry the fish for 3 minutes on each side, or until cooked through. If you have a lot of fish and are cooking in batches, keep the first batch warm by placing it in a slightly heated oven.
Step 3
Serve with the sauce and lemon wedges.
