Ingredients
- Pork Neck 40 oz
- Pork Skewers 40 oz
- Rooster 50 oz
- Green peppercorns to taste
- Onion 2 pieces
- Carrot 1 piece
- Bay leaf 3 pieces
- Garlic 4 cloves
- Salt to taste
Step-by-Step Guide
Step 1
Wash and cut the meat.
Step 2
Cover with water and soak for 2 hours.
Step 3
Wash the meat and pot, then cover with clean water.
Step 4
When it starts to boil, skim off the foam.
Step 5
Add the peppercorns and boil for 2 hours.
Step 6
Place the rooster in the pot.
Step 7
When it boils, add the onion and carrot. Cook for 5 hours.
Step 8
10 minutes before it's done, add salt, garlic, and bay leaves.
Step 9
Remove the meat. Discard the vegetables. Let the broth cool slightly.
Step 10
Cut the meat into small pieces and distribute them into molds.
Step 11
Pour the broth over the meat.
Step 12
Place in the refrigerator until set.
