Jasmine Rice with Vegetables and Chicken
Ingredients
- Pickled Chanterelles 20 oz
- Onion 1 piece
- Salt to taste
- Jasmine Rice 15 oz
- Skin-On Chicken Breasts 15 oz
- Orange Bell Peppers 2 pieces
- Mild Chili Spice ½ piece
- Cilantro 1 bunch
- Lemon ½ piece
- Vegetable Oil 6 tablespoons
- Grated Ginger Root 1 teaspoon
Step-by-Step Guide
Step 1
Cook the rice: pour 700 ml of water into a pot, bring to a boil, add the rice and stir. Once it boils, reduce the heat to low and cook covered for about 12–14 minutes (until all the water is absorbed).
Step 2
While the rice is cooking, prepare the other ingredients: cut the chicken breast into strips, slice the mushrooms, julienne the bell pepper, cut the onion into half-rings, and chop the cilantro coarsely.
Step 3
In a deep skillet, heat the vegetable oil and fry the chicken until cooked through, then transfer to a bowl and set aside.
Step 4
In the same skillet, add the onion and sauté, stirring occasionally, until translucent. Add the bell pepper and chili pepper, and continue to sauté, stirring occasionally, until the peppers are soft, then transfer to a bowl and set aside.
Step 5
In the skillet, add the mushrooms and fry until cooked through.
Step 6
Add the chicken, onion, and peppers to the mushrooms, along with the cilantro, lemon juice, grated ginger, and salt. Mix well.
Step 7
Add the rice to the vegetables and chicken, mix, and heat together for 1–2 minutes.
