Description
You can add any herbs you like to the patties. Serve with sausages and grilled chicken.
Ingredients
- Potato 20 oz
- Whole egg 2 pieces
- Salt to taste
- Ground Black Pepper to taste
- Herbs 1 bunch
- Grated Pecorino Pepato Cheese 0 oz
- Scallions 1 bunch
- Garlic 1 clove
- Olive Oil to taste
Step-by-Step Guide
Step 1
Rinse the potatoes well and boil them in salted boiling water until tender. Slightly cool, peel, and mash or pass through a sieve. Transfer to a bowl.
Step 2
Add the egg yolks, Parmesan cheese, finely chopped herbs, onion, and minced garlic. Season with salt and pepper.
Step 3
Roll the dough into balls about 5-7 cm in diameter. Gently flatten them to form patties.
Step 4
Heat a little olive oil in a skillet and fry the patties until golden brown on both sides, adding more oil if necessary. Transfer them to a paper towel and keep warm in a slightly heated oven while the remaining patties are frying. Serve warm.
