Ingredients
- Halibut 10 oz
- Fingerling Potatoes 10 oz
- Olive Oil 0 fl oz

- Red cocktail cherry 0 oz

- Fresh basil leaves 0 oz
- Parmesan Cheese 0 oz
- Olives stuffed with lemon 0 oz

- Butter 0 oz
- Garlic 2 cloves
- Capers 0 oz
- Dry White Wine 5 fl oz
- Salt to taste
- Vegetable Oil 0 fl oz
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Bring a pot of water to a boil, add salt, and then add the potatoes. Cook for 10–15 minutes until tender.
Step 3
Dice the onion into small cubes.
Step 4
Heat a skillet, add a little vegetable oil, and place the halibut fillet skin-side down. Cook for 2 minutes.
Step 5
Flip the fish and cook for another 2 minutes.
Step 6
Transfer the fish to a clean dish, then add the onion to the skillet, crush unpeeled garlic cloves with your palm, and toss them in with the onion.
Step 7
Add the capers and white wine to the mixture, and let it simmer for 30 seconds.
Step 8
Add olives, black olives, and cherry tomatoes, and sauté for another 2 minutes.
Step 9
Add the boiled potatoes to the skillet.
Step 10
You can lightly mash the potatoes with a potato masher to release some starch.
Step 11
Add the butter and stir for another 2 minutes.
Step 12
Tear the basil leaves into the skillet, return the fish, and let it cook for another 20 seconds.
Step 13
Serve the fish with potatoes, drizzled with olive oil and sprinkled with grated Parmesan.
