Italian-Style Beef in Tomato Sauce

Ingredients

  • Beef chuck roast 1½ kg
  • Dry White Wine 5 fl oz
  • Rosemary 3 stalks
  • Olive Oil 0 fl oz
  • Tomatoes 30 oz
  • Garlic 3 cloves
  • Pitted olives 0 oz
  • Basil 0 oz
  • Salt 1 tablespoon
  • Dried Chamomile 0 oz

Step-by-Step Guide

Step 1

Cut the meat into large pieces, about 3x4 cm.

Step 2

Soak the meat in white wine and rosemary, marinating it for 1 hour.

Step 3

Drain the marinade, but leave the rosemary with the meat, and pat the meat dry. Heat oil in a skillet over high heat and add the meat. Sear it on all sides, stirring vigorously.

Step 4

Bring 2 liters of water to a boil in a pot, add the tomatoes for 2–3 minutes, then remove them.

Step 5

Peel the tomatoes and grate them or blend them using a blender.

Step 6

Crush the garlic into the tomatoes, finely chop the basil, add pitted olives cut in half, and thyme.

Step 7

Pour the sauce over the meat, season with salt to taste, and simmer for about 30-40 minutes, until cooked through.
