Irish Stew
Ingredients
- Lamb Shoulder 5 lbs
- Salad Potatoes 10 pieces
- Onion 3 pieces
- Garlic 6 cloves
- Turnips 4 pieces
- Parsley 4 stems
- Salt to taste
- Fresh Rose Hips 1 sprig
- Boiling water 20 fl oz
Step-by-Step Guide
Step 1
Peel and chop the vegetables coarsely. Cut the meat in the same way, season with salt, and sauté in heated oil for 3 minutes on each side. Add the onion, garlic, carrots, and rosemary leaves. Cook, stirring, for 5 minutes.
Step 2
Pour in the boiling water, stir, and bring to a boil. Season to taste. Reduce the heat, add the potatoes, and cook covered for 2 hours.
Step 3
Add 3–4 ice cubes and skim off the fat that rises to the surface with a spoon. Bring to a boil again, add the chopped herbs, and serve in bowls.
