Description
The Irish term 'colcannon' translates to 'cabbage'. In the Middle Ages, the poor prepared this dish year-round. It's easy to see why—the ingredients and preparation method are extremely simple. Nowadays, vegetable mash is typically served only during the season when the main ingredient—cabbage—is in harvest.
Ingredients
- Potato 30 oz
- Kale 5 oz
- Scallions 0 oz
- Butter 5 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the potatoes, cut them into pieces, and boil in a large pot of salted water until tender. This will take about 20 minutes.
Step 2
In another pot, bring water to a boil and immerse the cabbage leaves, stripped of their thick veins, for two minutes.
Step 3
Then transfer them to ice water to stop the cooking process.
Step 4
Roughly chop the green onions, reserving one stalk for garnish. Slice the remaining onions into rings.
Step 5
Blend the blanched cabbage together with coarsely chopped onion.
Step 6
When the potatoes are done cooking, drain the water and add oil to the pot.
Step 7
When the butter has melted, mash the potatoes thoroughly until smooth and creamy.
Step 8
Add the cabbage-onion mixture from the blender to the puree.
Step 9
Stir, then season with salt and pepper to taste.
Step 10
Serve garnished with rings of onion.
