Indian-Style Vegetable Oatmeal
Ingredients
- Tomatoes 2 pieces
- Onion 1 piece
- Oat flakes 1 cup
- Frozen Green Peas ¼ cup
- Carrot ¼ piece
- Bell pepper ¼ piece
- Broccoli ¼ cup
- Turmeric a pinch
- Garlic ½ clove
- Ginger ½ teaspoon
- Cumin ½ teaspoon
- Ground coriander ¼ teaspoon
- Salt to taste
Step-by-Step Guide
Step 1
Slice the onion into half-rings, chop the carrot and bell pepper into small cubes, and cut the broccoli into random pieces.
Step 2
Lightly sauté cumin, minced garlic, and ginger root in vegetable oil in a skillet. Add the vegetables (except for the tomatoes) to the spices and fry for 3–5 minutes.
Step 3
Then add the tomatoes, salt, and turmeric to the mixture. Once the tomatoes become soft, add ground coriander and stir for a few more minutes.
Step 4
Pour water into the skillet, and once it boils, add the oat flakes. Cook until done, stirring constantly.
