Indian Red Lentils
Ingredients
- Fresh Cilantro 0 oz
- Vegetable Oil 2 tablespoons
- Onion 1 head
- Garlic 4 cloves
- Ginger 0 oz
- Garam Masala 1 teaspoon
- Water 3 cups
- Red Lentils 10 oz
- Coconut Milk 1 cup
- Plum Tomatoes 10 oz
- Salt 1 teaspoon
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat the oil in a large skillet over medium heat. Add the finely chopped onion, a teaspoon of salt, and sauté for 5 minutes until the onion becomes soft. Then add the minced garlic, grated ginger, garam masala, and sauté for another 15 seconds.
Step 2
Next, add the water, rinsed lentils, and coconut milk. Bring to a boil, then reduce the heat, cover the pot with a lid, and cook for 20-30 minutes until the lentils are tender. Sprinkle with chopped cilantro and season with salt and pepper. Before serving, top with diced tomatoes.
