Indian Pulao

Ingredients

  • Basmati rice 2 cups
  • Ghee 0 oz
  • Cloves 10 pieces
  • Cardamom Pods 10 pieces
  • Turmeric 1 teaspoon
  • Salt to taste
  • Frozen Green Peas 1 cup

Step-by-Step Guide

Step 1

Rinse the rice thoroughly under running water, soak it in cold water for 30 minutes, then drain in a colander and let it dry.

Step 2

Dissolve the turmeric and salt in a glass of water.

Step 3

Heat the ghee in a heavy-bottomed pan, sauté the seeds removed from the cardamom pods and cloves for 30 seconds.

Step 4

Add the rice and sauté for another 30 seconds while stirring.

Step 5

Pour in the water with turmeric, add another 2 cups of water, stir, and bring to a boil over high heat.

Step 6

Cook on low heat with the lid on for 20 minutes.

Step 7

5 minutes before it's done, add the peas (do not stir during cooking!).

Step 8

Add a few pieces of ghee (to taste) and let it rest.

Step 9

Stir before serving.

Step 10

Can be served with sautéed paneer (homemade cheese).
