Ingredients

  • Olive Oil 3 tablespoons
  • Onion 1 head
  • Garlic 3 cloves
  • Celery stalk 1 piece
  • Pancetta 5 oz
  • Fresh Mushrooms 5 oz
  • Dry martini 5 fl oz
  • Chicken Drumstick 4 pieces
  • Chicken Thighs 4 pieces
  • Baking Tomatoes 30 oz
  • Brown Sugar 0.2 teaspoons
  • Oregano 5 sprigs
  • Fresh Rose Hips 1 sprig
  • Bay leaf 1 piece
  • Spices to taste

Step-by-Step Guide

Step 1

Heat half of the oil in a large pot. Add finely chopped onion, garlic, and celery. Sauté over medium heat, stirring constantly, for 6-8 minutes until the onion is golden.

Step 2

Add the diced pancetta and mushrooms, increase the heat, and sauté, stirring constantly, for 4-5 minutes. Transfer to a plate.

Step 3

Add the remaining olive oil and lightly brown the chicken pieces, sprinkling with spices. Use a spoon to remove excess fat from the pot. Add the vermouth, increase the heat, and cook until the vermouth has completely evaporated.

Step 4

Add the tomatoes, sugar, 1 sprig of oregano, rosemary, bay leaf, and 75 ml of cold water. Bring to a boil and add the pancetta mixture. Cover and let simmer for 20 minutes until the chicken is tender.

Step 5

If the sauce in the pot is too thin, remove the chicken, increase the heat, and let the sauce thicken. Season with herbs and spices. When serving, garnish with sprigs of oregano.
