Ingredients

  • Pine nuts 1 cup
  • Olive Oil 1½ teaspoons
  • Canola Oil 1 tablespoon
  • Oyster Mushrooms 15 oz
  • Coarse Salt to taste
  • Lemon Juice 0 fl oz
  • Garlic 2 cloves
  • Tahini 15 oz
  • Canned chickpeas 6 cups
  • Ground Cumin 1 teaspoon
  • Chopped Parsley 1 tablespoon
  • Paprika to taste

Step-by-Step Guide

Step 1

Preheat the oven to 150˚C. In a bowl, mix the pine nuts with olive oil. Transfer to a baking sheet; roast, stirring occasionally, until golden brown, about 10 minutes. Set aside.

Step 2

In a deep, heavy-bottomed skillet, pour oil to a depth of 5 cm; heat over medium heat to 180˚C. Fry the mushrooms in batches in the oil (about 4 minutes). Transfer to paper towels to drain excess oil; season with salt.

Step 3

To prepare the hummus: blend the garlic with lemon juice in a blender until smooth. Add tahini, chickpeas, cumin, and salt; blend until creamy. Transfer the hummus to a serving dish and create a well in the center; fill the well with mushrooms and pine nuts. Sprinkle with parsley and paprika; drizzle with olive oil.
