Ingredients
- Goose fat 1 piece
- Salad Potatoes 10 pieces
- Onion 2 heads
- Clarified Butter 5 oz
- Vegetable Oil 0 fl oz
- Ground Black Pepper to taste
- Mayonnaise 5 oz
- Salt to taste
Step-by-Step Guide
Step 1
Cut the goose into pieces, season with salt and pepper, fry in a pan, transfer to clay pots, add coarsely chopped potatoes that have been fried in clarified butter, and sautéed onions cut into rings or half-rings in vegetable oil.
Step 2
Pour mayonnaise over the top and simmer until cooked for 1 hour. Before serving, sprinkle with finely chopped dill.
