Place a 3-liter jar of milk in a cool place for about 3 hours to allow the cream to rise to the top.

Thoroughly wash a 1.5-liter jar with baking soda.

Fill the 1.5-liter jar with milk. Use the remaining milk in the 3-liter jar as desired.

Leave the jar of milk at room temperature to sour for about 6-8 hours.

The milk must sour well; otherwise, the cottage cheese may not turn out properly.

Line the bottom of a pot with a kitchen towel. Place the jar of soured milk in the pot. Fill the pot with room temperature water so that the jar is almost completely submerged, leaving about 1.5 cm from the top.
