Homemade Boiled Sausage
Ingredients
- Cream 10 fl oz
- Chicken fillet 25 oz
- Egg white 3 pieces
- Salt to taste
- Ground Black Pepper to taste
- Spices to taste
Step-by-Step Guide
Step 1
Cut the raw fillet into pieces. Grind the chilled chicken (or turkey) fillet in a blender until creamy, add the egg whites, pepper, and salt to taste. Optionally, you can add nutmeg.
Step 2
Pour the cold cream into the minced meat and mix until smooth.
Step 3
On a rectangular piece of plastic wrap, place 1/3 of the minced meat, roll it into a sausage shape, and tie the ends with string. Repeat this process two more times. You will have 3 sausages.
Step 4
Pour water into a pot and place it on the heat, bring it to a boil, then reduce the heat to the minimum. The water should not boil. Place the sausages in the water and press them down with a small plate to keep them submerged. Cook for 60 minutes.
Step 5
Remove the sausages and let them cool.
Step 6
Remove the plastic wrap.
Step 7
On a table, lay out parchment paper, sprinkle the paper with spices and herbs (preferably Italian herbs). Place the sausage on the herbs and wrap it up. Do this with each sausage. Refrigerate for 8 hours, or overnight. Before serving, remove the paper and slice.
