Herring Curry
Ingredients
- Fillet of Sturgeon 10 oz
- Onion 1 head
- Carrot 2 pieces
- Cauliflower 0 oz
- Malt Vinegar ½ spoons
- Vegetable Oil 5 fl oz
- Mild Chili Spice 1 piece
- Coconut Milk 15 fl oz
- Red Curry Powder 3 spoons
- Salt to taste
Step-by-Step Guide
Step 1
Heat vegetable oil in a skillet, reserving one tablespoon for later. Add a tablespoon of curry powder to the oil and sauté for thirty seconds.
Step 2
Place the herring in a bowl, pour over the curry oil, drizzle with vinegar, cover with plastic wrap, and let it sit overnight.
Step 3
Finely chop the onion and carrot. In the remaining oil at the bottom of the pot, sauté the vegetables just a little until they start to change texture. Add the finely broken cauliflower. Sprinkle everything with the remaining curry, add thin slices of chili, and pour in coconut milk until it covers the vegetables. Let the curry simmer gently for a few minutes, then add pieces of curry-marinated herring. Season the mixture with salt to taste and remove from heat. Serve with boiled rice, couscous, or even noodles.
